Bikini Recipe

Yields 10 people

To make the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place all the items into a pan, heat until it reaches a simmer, agitating until the sugar dissolves. Then, take off the heat allowing it to cool down entirely. Transfer into an sealable bottle, close it keeping it chilled, it can be stored for up to a month.

For the Cocktail Base: Mix all the liquid ingredients in a big jug, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's perfectly clear.

When ready to serve: Measure 85ml of your batch mix into your cocktail shaker containing ice, and agitate lightly for one minute to cool it down. Pour into an frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch using a quick spritz of the essential oil over the drink.
